Cranberry Muffins

1 cup cranberries

2 1/4 cups sugar, separated

1 3/4 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon cinnamon

1/4 cup allspice

1/4 cup egg substitute

1/4 teaspoon orange peel

3/4 cup orange juice

1/3 cup unsweetened applesauce

Nonstick cooking spray


Coarsely chop cranberries.

Toss with 1/4 cup sugar; set aside.

In mixing bowl, combine flour 1/4 cup sugar, baking powder, cinnamon and allspice.

Combine egg substitute, orange peel, orange juice and applesauce; add to dry ingredients, stirring just until moistened (batter will be lumpy).

Gently fold in cranberry mixture.

Fill muffin tins sprayed with nonstick spray 2/3 full.

Bake at 400 degrees for 20 – 25 minutes until golden brown.
