Cranberry Muffins

Ingredients

1 cup cranberries

2 14 cups sugar, separated

1 34 cups all-purpose flour

1 tablespoon baking powder

12 teaspoon cinnamon

14 cup allspice

14 cup egg substitute

14 teaspoon orange peel

34 cup orange juice

13 cup unsweetened applesauce

Nonstick cooking spray

Directions

Coarsely chop cranberries.

Toss with 14 cup sugar; set aside.

In mixing bowl, combine flour 14 cup sugar, baking powder, cinnamon and allspice.

Combine egg substitute, orange peel, orange juice and applesauce; add to dry ingredients, stirring just until moistened (batter will be lumpy).

Gently fold in cranberry mixture.

Fill muffin tins sprayed with nonstick spray 23 full.

Bake at 400 degrees for 20 – 25 minutes until golden brown.
